Ash is a combination of various minerals in trace amounts, depending on the formulation. However, it is not deliberately added by manufacturers; it is what is left from the incineration of protein, fat, and carbohydrate as it is analyzed for nutrient levels as it undergoes guaranteed analysis.

It is supposed to be present in very low percentages in a cat’s meal. About 8% or lower is an acceptable value. On the other hand, wet cat food seldom contains ash, at around only 2% or lower.
